Sometimes you need more in a snack, and instead of reaching for sweets (me) try a healthier, more satisfying option – avocado toast! This version is so easy to make, I wouldn’t even consider it a recipe, rather a solid go-to for your healthy eating arsenal. I find myself making it a few times a week whether for breakfast, lunch, or a snack.
Cube half an avocado and scoop into a bowl. Squeeze about a tablespoon of fresh lemon juice over the avocado, and add a glug of olive oil. Stir just enough to coat, and spread onto a toasted piece of whole grain bread. Sprinkle with a little flakey salt and crushed red pepper. Easy and so good!
